Ingredients

  • 1/2 recipe Instant Pot Brown Rice

  • 1 tablespoon Olive Oil

  • 1/2 medium Onion, peeled, diced small

  • 1/2 Jalapeño, deseeded, minced

  • 2 cloves Garlic, peeled, minced

  • 1 (15-ounce) can Black Beans, drained, rinsed twice

  • 1 teaspoon Chili Powder

  • 1/2 teaspoon Ground Cumin

  • 2 tablespoons Cilantro, chopped

  • 1 Lime, juiced

  • 4 (10-inch) Flour Tortillas

Instructions

Start by preparing the instant pot brown rice according to the instructions. If you're not stocked with an instant pot, cook the rice in a rice cooker or add an extra 15 minutes of cooking time using the stovetop.

Place a medium non-stick skillet onto medium heat on the stovetop for 1 minute, adding in the olive oil.

Sauté the onions in the pan, stirring for 2 minutes until the onions are translucent.

Stir in the jalapeños and garlic to sauté for 1 minute before adding the black beans to the pan.

Mix the chili powder and ground cumin, cooking everything for 5 minutes.

Remove the pan from the heat, stirring in the cilantro and lime juice.

Preheat a large pan on medium heat onto the stovetop.

Arrange the tortillas onto a cutting board, divide the rice and beans into the center of the tortillas. Fold the sides of the tortilla, overlapping the filling before grabbing one end of the tortilla and rolling it tightly around the filling.

Place the burritos seam side down into the pan to crisp up the tortilla for 2 minutes.

Flip the burritos over, toasting the other side for 2 minutes.  Transfer the burritos back to the cutting board, slicing them in half before dividing them onto plates.
