His beginnings were humble, but his dreams were always big. Growing up in the heartland of the sugar industry, Narandradath Jaikaran hoped to become an aeronautical engineer. Hard times made that impossible, but he still managed to excel, graduating from UWI with both a BSc. In Mechanical Engineering and an MBA.
Narandradath’s early career spanned 25 years beginning as a Mechanical Engineer and progressing to Maintenance Manager and then Training Coordinator in the heavy industrial sector, both in Trinidad and Barbados.
Narandradath perfected his engineering skills as he successfully managed plant and equipment to improve reliability, productivity, efficiency and safety. Meticulous and driven to seek perfection in all that he did, he was responsible for maintenance, turnaround and installation of million dollar plant and equipment. Later he joined Human Resources where he developed and planned training as an HR intervention to improve the competencies of the workforce throughout his organization working for an international methanol company. Additionally, he also served on the Boards of HDC, Bakery Association and the Rotary Club.
But Narandradath had a deeply creative and nurturing side that drove him to develop a third career, in an unexpected place: Baking Chef!
Fifteen years ago he opened Classic Bakes Bakery in Retrench, San Fernando. After mastering the bakery industry, he decided to specialize in celebratory cakes. Firstly, under local cake experts, then with teachers in Canada (Wilton) and most recently in London with world-renowned master cake artists, Ceri Griffits and Alann Dunn. He has traveled the globe to master the cake business, from Austria and Paris to New Zealand, England, the USA, Canada and further afield, combining this with ongoing on-line tutoring.
Loyal customers loved the Bakery for its wide range of quality products, especially its delicious homemade cakes, bread and pastries. And after just eight years of operations Narandradath was encouraged by Customer feedback to become a local Cake Boss.
Today, Narandradath is unique in T&T as a “Cake Engineer,” using cutting edge technology gained from his years in engineering, to offer customers celebratory cakes, especially wedding cakes. His cakes are intricate in design and masterpieces of structural integrity. His stylish and contemporary product has found favour with customers seeking a competent professional who will meet their expectations.
His passion lies in quality, precision, attention to detail and neatness for each of his cakes. His specialty skills include fondant modeling, sugarcraft flowers and foliage artistry, brush embroidery, stenciling, advanced sculpting, structural integrity, lace, isomalt and advanced airbrushing.
“Every one of my cakes is engineered!” he says, My goal is to raise the wedding cake standards locally, which is why I have invested in world-class training abroad to ensure that my customers enjoy contemporary designs and techniques.”
Narandradath’s wedding and celebratory cakes range from local Black cake, to authentic homemade sponge, chocolate, egg and eggless cakes, and unique contemporary flavors. The flowers for his wedding cakes are hand crafted from his own sugar paste and capture the essence of nature via air brushing, petal dusting and other techniques to form intricate elegant floral bouquets.
