Roasted Broccoli with Parmesan in a bowl on top of a cloth

Simple, wholesome, and full of flavor, this Roasted Broccoli with Parmesan recipe transforms a humble vegetable into a crave-worthy side dish. By roasting broccoli florets and stalks with olive oil, lemon, and spices, then finishing with grated Parmesan, you get crispy edges, tender bites, and nutty, zesty goodness in every forkful.

  • Naturally gluten-free, lacto-vegetarian, Whole30-friendly, and low-carb
  • Takes just 30 minutes from start to finish
  • Great way to use both broccoli florets and stalks—less waste, more flavor
  • Kid-friendly and perfect for everyday meals or meal prep

  • Cut broccoli into similar sizes for even roasting
  • Don’t overcrowd the pan—use a large tray or roast in batches
  • Sprinkle Parmesan while hot so it melts slightly into the broccoli

  • Dairy-Free: Omit Parmesan or use a vegan alternative
  • Spicy Version: Add red pepper flakes or smoked paprika
  • Add crunch: Toss in slivered almonds or toasted pine nuts before serving
  • Citrus Swap: Try lime juice instead of lemon for a twist

  • Refrigerate in an airtight container for up to 3 days
  • Reheat in a hot oven or air fryer for best texture
  • Use in recipes: Add to omelets, wraps, or stir into rice or pasta dishes

  • Broccoli – Use both florets and sliced stalks for full texture
  • Extra Virgin Olive Oil – Helps crisp the edges and carry flavor
  • Lemon Juice – Adds brightness and balances the earthy notes
  • Garlic Powder & Onion Powder – Classic savory seasoning
  • Parmesan Cheese (grated) – Nutty, salty finish
  • Salt & Black Pepper – Adjust to taste

Ingredients

  • 1 bunch Broccoli

  • 3 tablespoons Extra Virgin Olive Oil

  • 1 tablespoon Lemon Juice

  • 1 teaspoon Garlic Powder

  • 1 teaspoon Onion Powder

  • 1/4 cup Parmesan Cheese - grated

  • Salt & Pepper to taste

Instructions

Preheat the oven 400 °F/ 204 °C and place a rack in the middle of the oven.

Prepare a baking tray or sheet with a piece of parchment paper or spray with nonstick cooking spray.

Using a small bowl, whisk together the oil, lemon juice, garlic and onion powder, then set the seasoning aside.

Cut the broccoli bunch by cutting off pieces of stem and floret together away from the main stalk to have your miniature trees, then slice the main stalk into large bite-sized chunks.

Place the pieces of broccoli into a large bowl, then add the seasoning and toss to coat all the broccoli.

Spread the seasoned broccoli onto the baking tray and bake for 15-20 minutes or until you see the edges crisp up and the broccoli is fork-tender.

Remove from the oven and, while warm, sprinkle with Parmesan cheese and season with salt and black pepper to taste, then serve warm.
