Are you experiencing some cold weather? Have some of this Keto Broccoli Cheese Soup. It's creamy, cheesy, and quite delicious. The chicken bone broth adds extra depths of flavor and tons of nutrition too. Chicken bone broth is rich in bone-building minerals such as calcium, magnesium, and phosphorus. Meanwhile, broccoli is rich in Vitamins C and K, which boost your immune system and help your blood clot.

Ingredients

  • 1 teaspoon Olive Oil

  • 1/2 Onion, diced

  • 3 cloves Garlic, minced

  • 3 cups Chicken Bone broth

  • 3/4 cup Heavy Cream

  • 3 cups Broccoli, cut into florets

  • 3 cups Cheddar Cheese, shredded (plus 1 cup for garnish)

  • Salt and Pepper to taste

Instructions

In a large pot over medium heat, add olive oil.

Once the olive oil is hot, add onion and garlic. Sauté for 1 minute.

Add chicken bone broth, heavy cream and broccoli. Bring to a boil over high heat.

Once the mixture starts to boil, reduce heat to a simmer. 

Simmer for 15 minutes until broccoli becomes tender.

Using a slotted spoon, transfer 1/2 of the broccoli florets in a plate.

Purée the rest of the broccoli using an immersion blender.

Add 1/2 cup of the shredded cheese to the soup, stirring well.

Repeat with the rest of the cheddar cheese.

Purée soup, adding salt and pepper to taste.

Transfer the plated broccoli to the soup, mixing well.

Ladle the soup into bowls, garnishing with shredded cheddar cheese. Serve with toasted low-carb baguette slices.
