Need a boost in brain power? Try this recipe for Air Fryer Salmon Patties! They're crispy and golden on the outside and flaky and moist on the inside and taste delicious. That's because we used fresh salmon fillets, not canned salmon. So they taste much fresher and contain less sodium too.

We also used almond flour instead of breadcrumbs as a binder. Almond flour is a healthy, low-carb alternative to regular flour-based products. Almond flour is also high in protein, vitamin E, and healthy fats. Finally, we added dill, zest, and lime juice to make these salmon patties drool-worthy.

We also made some fresh guacamole as a dipping sauce. So go ahead and dip one or two! Your brain will love the boost of omega-3s.

Ingredients

Air Fryer Salmon Patties
  • 2 small Salmon Fillets, skin removed (10 ounces total)

  • 1 1/4 cup Almond Flour

  • 2 large Eggs

  • 1/2 teaspoon Dried Dill

  • 3/4 teaspoon Salt

  • 1 teaspoon Garlic Powder

  • 1/4 teaspoon Black Pepper

  • 1 Lime, juiced and zested

  • Olive Oil Cooking Spray

Guacamole
  • 2 Avocados, ripe, pitted and halved

  • 1/2 small Red Onion, finely diced

  • 2 tablespoons Fresh Cilantro, finely chopped (plus extra cilantro for garnish)

  • 1 Jalapeño Pepper, seeds removed and finely diced

  • 1 clove Garlic, minced

  • 1/2 Lime juiced (plus optional 1/2 lime for garnish)

  • 1/4 teaspoon Salt

Instructions

Air Fryer Salmon Patties

Using a knife, cut the salmon into pieces, and add the salmon and the rest of the ingredients (minus the olive oil cooking spray) to a food processor.

Process on high speed until mixture is combined but still chunky.

Using your hands, shape the salmon mixture into 6 patties no more than one inch thick. For 30 minutes, place in the fridge to firm up.

Heat air fryer to 400 degrees Fahrenheit.

Prepare the olive oil cooking spray and spray in the air fryer basket. Place the salmon patties in a single layer on the bottom of the airfryer basket. Spray the tops of the salmon patties with the olive oil cooking spray.

Air fry for ten to twelve minutes until crispy and cooked through, turning halfway through.

Guacamole

To a medium bowl, add avocado. Using a fork, mash until chunky.

Add and stir well the rest of the ingredients. 

Assembly

Place salmon patties on a circular serving platter, leaving a space in the center.

Place guacamole in a small serving bowl, then place the bowl in the middle of the platter. Garnish with cilantro and lime.
