Ingredients

  • 4-6 Salmon Fillets, 8 ounces

  • 2 tablespoons Extra Virgin Olive Oil

  • 2 tablespoons Unsalted Butter

  • 1 teaspoon of Lemon Zest

  • 4 tablespoons Lemon Juice

  • 3 cloves Garlic - minced

  • 1 teaspoon Old Bay Seasoning

  • Salt & Black Pepper to taste

Instructions

Preheat the oven to 400 °F/ 204 °C and place a rack in the center of the oven, then coat the oven-safe dish with a cover with butter and set aside. Alternatively, foil can make one large packet or envelope to cook the fish.

Using a small bowl, mix the oil, zest, juice, garlic, and old bay seasoning until it combines into a sauce.

Season the fish with salt, and black pepper, then place in the buttered dish, then cover with the sauce.

Cover and place in the oven to bake for 15-20 minutes or until the salmon has a flaky texture.

Remove from the oven and serve with your choice of side dish like the Quick and Easy Jamaican Banana Fritters.
