Some people think that when bananas start to have spots and turn brown, they’re no longer suitable to eat; however, this is the exact opposite. When bananas get ripe, they are even sweeter and flavorful, making them a perfect sweet snack. This recipe for quick and easy Jamaican Banana Fritters utilizes the extra sweetness of ripe bananas with local spices to make a flavorful and indulgent fried snack. This recipe is a great snack to serve at a party over a hot cup of coffee or tea.

Ingredients

  • 4 Ripe Bananas

  • 1 Teaspoon Mixed Essence

  • ½ Teaspoon Cinnamon

  • ½ Teaspoon Nutmeg

  • 2 Tablespoons Brown Sugar

  • ⅛ teaspoon Salt

  • 230 g All-Purpose Flour

  • 1 teaspoon Baking Powder

  • Oil for frying

Instructions

Peel the bananas, place them in a bowl and use a masher or fork to mash them into pulp; chunks are optional.

Stir in the mixed essence, cinnamon, nutmeg, brown sugar, and salt

Mix in the flour and baking powder until the mixture is the consistency of a thick batter, then let rest in the fridge till ready to fry

Place oil into a large deep skillet and warm to 350 °F/ 178 °C.

While the oil is heating up, prepare a drying station for the fritters as they come out of the hot oil with a rack and baking pan or a dish with paper towels.

Once the oil is ready, place a few dollops of the banana batter into the hot oil, making sure there’s enough room for them to move around and cook for 1-2 minutes on each side until golden brown, then remove to the drying station.

Continue to fry dollops of banana batter until it’s all finished.

Serve the fritters warm to the touch and enjoy or add a dip or toppings of your choice for fun.
