Pancakes are a delicious breakfast treat that makes you feel like a kid again. However, we have creatively made these tasty morsels to the next level with this recipe for Vegan Banana Pancakes. By adding bananas and a little coconut milk, these pancakes are filled with natural sweetness. Top with some warm maple syrup, and you have a breakfast of champions.

Ingredients

  • 3/4 cups All purpose flour

  • 1 large Ripe Banana - mashed

  • 1 tablespoon Baking powder

  • 1/2 teaspoon Salt

  • 3 tablespoons Brown sugar

  • 1 teaspoon Cinnamon

  • 180 ml Coconut Milk

  • 3 tablespoons Virgin coconut oil plus extra for cooking

  • 1/4 teaspoon Mixed Essence

Optional Pancake Garnish
  • 1/4 cup Maple Syrup

  • 2 tablespoons Dessicated Coconut

  • 1/4 cup Fresh Strawberries 

Instructions

Mix all dry ingredients in one bowl and all wet in another, then fold using a rubber spatula, to combine the two into one bowl until you have a thick batter.

Place an large skillet on medium-low heat and coat the pan with some oil or non-stick cooking spray.

Scoop a ladle or one ¼ cup of batter and pour it onto the hot pan, then let it cook for about 1-2 minutes.

Once you see bubbles forming all over the top of the pancake, carefully flip it over to the other side with a spatula and cook for another 1-2 minutes or until golden brown on both sides.

Remove from the pan onto a plate and repeat the cooking process until all the batter is finished.

Serve warm, top with your favorite pancake syrup, desiccated coconut, and fresh strawberries, and enjoy
