Banana Bread Waffles on a plate

Get the flavor of banana bread in the crispy, golden form of a waffle! These Banana Bread Waffles are the perfect fusion of breakfast and dessert—moist, spiced, and vegan-friendly. Made with ripe bananas, coconut milk, and a warm blend of cinnamon, ginger, and nutmeg, they’re a cozy twist on your morning routine.

These waffles are everything you love about banana bread—comforting, lightly sweet, and full of flavor—but with crispy edges and fluffy centers. Plus, they’re egg-free, dairy-free, and easy to make in under 30 minutes.

  • Use overripe bananas for maximum sweetness and better mashability.
  • Preheat the waffle iron fully to ensure crisp, golden waffles.
  • Keep finished waffles warm in the oven while you cook the rest.

  • Top with vegan chocolate hazelnut spread and sliced bananas.
  • Add maple syrup or a sprinkle of powdered sugar.
  • Pair with a spiced latte or chai tea for a comforting breakfast.

  • Flour: Use whole wheat flour for added fiber.
  • Milk: Almond or oat milk can replace coconut milk.
  • Toppings: Swap hazelnut spread with almond butter or maple syrup.

  • Short-Term: Store in the fridge for 2–3 days. Reheat in a toaster or oven to restore crispness.
  • Long-Term: Freeze between layers of parchment paper in an airtight container for up to 2 months.

  • Ground Flaxseed + Water – A vegan egg substitute that binds the batter.
  • All-Purpose Flour + Brown Sugar – The base for a subtly sweet waffle.
  • Baking Powder + Sea Salt – Helps them rise and balances flavor.
  • Cinnamon, Nutmeg, Ginger – Warm spices that enhance the banana flavor.
  • Melted Vegan Butter + Coconut Milk – Adds moisture and richness.
  • Overripe Bananas – Provide natural sweetness and softness.
  • Vanilla Extract – Boosts flavor and aroma.
  • Vegan Chocolate Hazelnut Spread + Sliced Banana – For serving and indulgence.

How to Make Banana Bread Waffles

Start by mixing ground flaxseed with water and set it aside to thicken. In one bowl, whisk together the dry ingredients: flour, brown sugar, baking powder, salt, and spices. In another bowl, combine the wet ingredients: melted vegan butter, coconut milk, mashed bananas, vanilla, and the flaxseed mixture.

Combine wet and dry ingredients just until mixed. Preheat your waffle iron and grease if needed. Add about ⅓ cup of batter and cook according to the manufacturer’s directions until golden and crisp. Transfer each cooked waffle to a wire rack set over a baking sheet and keep warm in a low oven while you finish the batch.

To serve, spread each waffle with vegan chocolate hazelnut spread and top with fresh banana slices.

Can I make these gluten-free?

Yes—use a 1:1 gluten-free flour blend that includes xanthan gum.

Can I skip the chocolate hazelnut spread?

Absolutely! They're delicious with just banana slices or a drizzle of syrup.

What makes these waffles vegan?

They contain no dairy or eggs—flaxseed and coconut milk do the heavy lifting!
