Pumpkin waffles are not just limited to fall. These Vegan Pumpkin Waffles will bring you the flavors of fall year-round. Of course, this vegan recipe would not be complete without the star ingredient pumpkin, but we decided to add spices like cinnamon, nutmeg, ginger, and cloves to add more flavor to the pumpkin waffles. Best of all, besides a waffle iron, you will not need any fancy equipment to make this vegan recipe. We hope you enjoy the fall flavor of these vegan pumpkin waffles.

Ingredients

  • 1 1/4 cups All-Purpose Flour

  • 1 1/2 teaspoons Baking Powder

  • ¼ teaspoon Baking Soda

  • 1/4 teaspoon Salt

  • 1 teaspoon Cinnamon

  • 1/2 teaspoon Ground Ginger

  • 1/4 teaspoon Nutmeg

  • 1/8 teaspoon Ground Cloves

  • 1 1/4 cups Coconut Milk

  • 1 cup Pumpkin Purée

  • 1/4 cup Light Brown Sugar

  • 2 tablespoons Granulated Sugar

  • 3 tablespoons Vegan Unsalted Butter, melted

  • 1 teaspoon Vanilla Extract

Instructions

Whisk all-purpose flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and cloves in a large bowl.

 

Whisk the coconut milk, pumpkin purée, brown sugar, granulated sugar, butter, and vanilla extract in a separate medium bowl until combined.

Add the coconut milk mixture to the spiced flour and mix until combined. The pumpkin waffle batter does not need to be smooth. Lumps are okay.

Preheat waffle iron.

Add 1/3 cup of the pumpkin waffle batter to the waffle iron and cook according to the manufacturer's instructions. 

If desired, serve the pumpkin waffles with butter, walnuts, and pancake syrup.
