The jalapeños add spiciness, while the onions and garlic powder add savory notes. They're served with creamy, tangy avocado salsa. Salmon provides protein and heart-healthy omega-3s, while avocados provide fiber and heart-healthy monounsaturated fats.

Salmon Cakes:
  • Two 5 ounces of canned Pink Salmon, drained


  • 1 large Egg

  • 3 tablespoons Ground Pork Rinds

  • 1/2 Jalapeño, diced

  • 2 tablespoons Mayonnaise

  • 1/4 Onion, diced

  • 1/4 teaspoon Garlic Powder

  • 1/8 teaspoon Salt

  • 1/4 teaspoon Pepper

  • 1 tablespoon Olive Oil

  • Lime slice for garnish (Optional)

Avocado Salsa:
  • 1 Avocado

  • 1/4 Red Onion, diced

  • 1/2 teaspoon Cilantro, chopped (plus intact cilantro for garnish)

  • Juice of 1/2 Lime


Salmon Cakes Preparation:

Add canned pink salmon, egg, ground pork rinds, jalapeño, mayonnaise, onion, garlic powder, salt, and pepper in a large bowl. Mix well.

Using the salmon mixture, form 6 patties.

In a large skillet over medium-high heat, add olive oil. Once hot, fry the patties for about 5 minutes until patties are golden and crispy.

Avocado Salsa Preparation:

In a mixing bowl, add avocado, red onion, cilantro, and lime juice, mix well.

Serve the salmon cakes in a plate with a bowl of avocado salsa, garnishing with cilantro and lime slice.
