Cool, crisp, and refreshingly light, this Vegan Cucumber Salad is the perfect side dish for warm days or whenever you need something fresh and simple. Made with thinly sliced cucumbers, fresh mint, sesame seeds, and a zesty lime vinaigrette, it’s bright, hydrating, and ready in just 5 minutes. Ideal for vegan, gluten-free, low-carb, and ketogenic diets.
Most cucumber salads contain onions, tomatoes, and vinegar. However, we used fresh mint and sesame seeds instead of using the same old bland ingredients.
Although cucumbers are used as a vegetable, botanically speaking, they are considered a fruit. This is because they contain tiny seeds and grow from the plant's flower.

Can I make this salad ahead of time?
Yes—just keep the dressing and cucumbers separate until ready to serve for the best texture.
Do I need to peel the cucumbers?
No, but you can peel them if preferred or if the skin is waxed or too thick.
Can I use dried mint instead of fresh?
Fresh is best, but in a pinch, you can use a small amount of dried—start with 1/4 teaspoon.
