Ingredients

Kale Salad:
  • 4 cups Kale, tough stems removed, torn into pieces

  • 2 tablespoons Olive Oil

  • 1 cup cooked Quinoa

  • 1 Honey Crisp Apple, sliced thin

  • 1 cup Pomegranate Seeds

  • 1/2 cup Pecans

Dressing:
  • 1/4 cup Olive Oil

  • 3 tablespoons Balsamic Vinegar

  • 1/2 teaspoon Kosher Salt

  • 1/4 teaspoon Garlic Powder

  • 1/4 teaspoon Onion Powder

  • 2 tablespoons Maple Syrup

  • 1/4 teaspoon Black Pepper

Instructions

Salad:

Place the kale in a serving bowl. Add the olive oil, and massage it with clean hands until it softens.

Place the quinoa on top of the kale, then arrange the apple slices, pomegranate seeds, and pecans on top.
