Sweet Rice is the Caribbean colloquial term for Rice Porridge or Pudding. The history of this dish comes from the rice-rich region of Asia, but worldwide you can find regional variations of this dish today. In India, it is Rice Kheer; Muhalibiyya is an Arabic version; Khanom sot sai in Thailand; Rizogalo in Greece; hrísgrjónagrautur in Iceland; And it is called Arroz con Leche in parts of Central and South America. This simple dish consists of long-grain white rice cooked to a thick pudding-like consistency flavored with species and sweetened with sugar, honey, or plant-based syrups. This recipe is another excellent option for a cold morning breakfast or a sweet, comforting sweet snack. We provide you with plant-based options for our vegan followers.

Ingredients

  • 1 cup Basmati Rice

  • 400 ml Water

  • 1/2 teaspoon Salt

  • 300 ml Whole Milk or Plant-based milk

  • Condensed Milk Or Coconut Condensed Milk to sweeten

  • Brown Sugar Honey Or Syrup of your choice to sweeten

Spices
  • 1 teaspoon Cinnamon or to taste

  • 1 small piece Ginger Minced

  • 1 Large Bay Leaf

  • 1/2 teaspoon Cardamom

  • 1 Star Anise

Optional Ingredients
  • Chopped Nuts

  • Dried Fruit Or fresh fruit

  • Desiccated Coconut

Instructions

Wash the rice thoroughly until the water strains. 

Using a 3-4 quart saucepan, add the rice, spices, and water and bring to a boil on medium to high heat.

Once the water begins to boil, reduce the heat to low, cover, and cook for 20 minutes or until the rice is almost fully cooked.

Add the milk and cook for 10-15 minutes, constantly stirring to prevent burning at the bottom of the pan.

Once the rice has absorbed most of the milk, add the condensed milk, spices, and sweetener of choice to taste.

Serve warm in bowls and top with any of the optional ingredients you like.
