Coconut is one of nature’s sweetest gifts. It can be made into oil, milk, sugar, cream, and from there, the sky’s the limit on how it can be used to create a variety of dishes. One of the most straightforward ways to enjoy the coconut flavor is in a nice bowl of pudding. Whether you like warm or cold pudding, the naturally sweet, creamy, nutty coconut flavors infused into a pudding's silky texture are decadent. This recipe will show you how to make coconut pudding with only four ingredients. This Coconut Pudding is also Dairy-free, Gluten-free, and Vegan friendly.

Ingredients

  • 1 1/2 cups Unsweetened Coconut Milk

  • 1/3 cup Coconut Condensed Milk

  • 1/3 cup Arrowroot or Cornstarch

  • 1 teaspoon Coconut Essence/ Extract

  • ¼ teaspoon of Salt

Toppings
  • Desiccated Coconut

  • Diced Fresh Fruit, mango and pineapple are highly recommended.  

Instructions

Warm the coconut milk in a saucepan on medium-high heat until it starts to boil.

Once it starts to boil, bring it down to medium-low, whisk in the rest of the ingredients and cook until it starts to thicken up.

When you have reached your preferred pudding thickness, remove from the heat and sweeten to taste with powdered sugar or more coconut condensed milk.

Using a fine-mesh strainer, strain the pudding to get rid of any lumps that may be leftover, resulting in a smooth and velvety coconut pudding.

Evenly portion the pudding into bowls using a large scoop or ladle, and serve the coconut pudding warm or chilled, topped with some Desiccated Coconut or fresh fruit on top.
