Instructions

Add flour, baking powder, baking soda, and salt, and whisk to combine in a medium bowl.

Combine the sugar, oil, beaten eggs, vanilla extract, and coconut extract in a separate bowl. Add honey and whisk until combined.

Add the sugar mixture and buttermilk to the flour mixture and mix until thoroughly moist. Then, add the shredded coconut.

Prepare two 8" x 4" Loaf Pans, spray with a non-stick spray & pour the batter equally into the pans, and spread evenly throughout the pan.

Bake at 325 °F on the middle shelf for 45 minutes to 60 minutes or until golden brown. Remove from the oven and let it cool down on a cooling rack. Once cool, serve and enjoy!
