Do you have a fresh pineapple that you need to use? Make this easy Pineapple Chutney. The Pineapple adds tons of the Caribbean "Flava," while the red chili pepper provides spiciness. Meanwhile, the sugar adds sweetness, balanced out by the acidity of the fresh lime juice. Your taste buds will be doing a little happy dance. To make this Pineapple Chutney, start by sautéing the red onion and spices in olive oil. Then add the ingredients and simmer for 30 minutes until the chutney thickens. 

Besides being tasty, this chutney is also nutritious. Pineapple is rich in vitamin C and manganese, which boosts immunity and bone health. It also contains bromelain, a digestive enzyme that may make it easier to digest meat. Bromelain may also reduce inflammation.

This Pineapple Chutney goes well with your favorite grilled protein and Rotis, like Trinidad Sada Roti, Trinidad Paratha Roti, and Trinidad Pepper Roti.

Pineapple chutney is made of red onions, cumin, pineapple, tomatoes, red chili pepper, ginger, vinegar, sugar, salt, lime juice, and cilantro.

Ingredients

  • 1 tablespoon Olive Oil

  • 1 Red Onion, finely chopped

  • 1 teaspoon Ground Cumin 

  • 1 Fresh Pineapple, peeled, cored, and diced medium

  • 2 Roma Tomatoes, seeds removed, diced small

  • 1 Red Chili Pepper, minced

  • 1 tablespoon Fresh Ginger, grated

  • Juice of one Lime

  • 1/2 cup Brown Sugar

  • 1/2 teaspoon Salt

  • 2 tablespoons Cilantro, leaves chopped

  • 1/2 cup White Vinegar

Instructions

To a large heavy-bottom pan, add olive oil over medium-high heat. Once hot, add the red onion and cumin, sauté for 5 minutes.

Add the remaining ingredients and simmer for one hour until it thickens.

Let cool and then store in airtight jars. Serve with crackers, roti, or grilled proteins such as pork, shrimp, chicken or fish.
