What is Jub Jub? Jub Jub is a sweet candy known for its chewy, gelatinous texture, similar to a gummy bear. This local treat is made with gelatin, sugar syrup, and tropical flavorings. This candy is similar to Turkish Delight or Lokum but without nuts or powdered sugar. Jub Jub is instead covered in caster sugar to help show off the usually bright colors of the candy. Instructions

Prepare the baking dishes by lightly coating them with virgin coconut oil, vegetable shortening, or lightly misting the dish with water before adding the gelatin.
Add the 250 ml water into a small bowl, then slowly whisk and pour the gelatin crystals in until it’s thoroughly combined with no lumps and set aside. This is to soften the crystals, not to dissolve them that will come later.
Into a 3 quart saucepan, add the granulated sugar and 125 ml of water, then stir continuously over medium to high heat until dissolved and the consistency turns into a syrup. Take a spoon, scoop up some of the syrup and pour the mixture back into the pot to see if strands or threads of sugar syrup are forming from the spoon. This means the syrup is ready.
Now mix the lime juice and softened gelatin crystals into the sugar syrup until it’s completely dissolved and has a smooth texture.
Remove from the heat and pour half of the mixture into each of the prepared dishes.
Do each dish, add one of the flavored drink packets and whisk until dissolved. This will add flavor and color to the Jub Jub.
Leave the gelatin in a cool place where it will not be disturbed for at least 4 hours or until it is firm to the touch.
Remove the gelatin from the dish, cut into bite-sized squares and toss in caster sugar before serving.
Serve as a sweet candy snack store in an airtight container or bag for about two weeks if it lasts that long.
NOTES
If you do not want to use powdered flavored drink mix, you can replace them by exchanging the water in this recipe with your favorite juice and adding a few drops of food coloring if you like.
If you want to omit the flavorings altogether, add a few drops' food coloring to add color.
