Ingredients

Peach Puree
  • 4 Peaches, peeled, diced

  • 1/2 cup Sugar-Free Sweetener

  • 1/2 teaspoon Cinnamon

Ice Cream
  • 1 1/2 cups Heavy Cream

  • 1 cup Almond Milk

  • 1/8 teaspoon Salt

  • 1 teaspoon pure Vanilla Extract

  • 1/2 cup Sugar-Free Sweetener

  • 5 Egg Yolks, room temperature

  • 1 Peach, sliced, for garnish

Instructions

Place the peaches, sugar-free sweetener, and cinnamon in a medium bowl and stir to combine. Let the peaches sit for 20-30 minutes until they start to release their juices.

Place the peaches into a blender with their liquid and blend until combined. Set the peach purée aside.

Ice Cream

To make the ice cream base, place the heavy cream, almond milk, salt, vanilla extract, and sugar-free sweetener into a medium saucepan and stir to combine.

Heat the ice cream base over medium-high heat until it is hot but not boiling. Then, take the ice cream base off of the heat.

To a medium bowl, add the egg yolks.

Whisk the eggs, then ladle 1/3 of the ice cream base into the egg yolks while whisking constantly.

Continue adding the ice cream base to the egg yolks in 1/3s while constantly whisking until all of it is gone.

Place the ice cream base back into the medium saucepan and cook it over medium-low heat for 10 minutes, frequently stirring until it thickens slightly.

Take the ice cream base off of the heat, pour it into a fine-mesh sieve set over a bowl or 4 cup liquid measuring cup, and stir in the peach purée.

Let the ice cream base cool completely. Wrap the ice cream base with plastic wrap, making sure to press the wrap on the surface of the ice cream base. Refrigerate it for 6 hours or overnight.

To an ice cream machine, add the ice cream base and churn it according to the manufacturer's instructions (it should take about 20-30 minutes to churn the ice cream). Place the ice cream in an airtight container. Press a piece of plastic wrap directly on the surface of the ice cream and freeze it for 2-4 hours until it reaches your desired consistency.

To serve the ice cream, remove it from the freezer. If the ice cream is hard, let the ice cream sit on the counter for 5-10 minutes until it softens up. Scoop the ice cream into serving bowls using an ice cream scoop and garnish it with the sliced peaches.
