The only way to make cookie bars better is to add M&Ms. These M&M Cookie Bars are perfect. They give you all the deliciousness of a cookie but in bar form. The bars are chewy, buttery, delicious, and so easy to make. Best of all, the M&M cookie bars are gluten-free, so they are healthier than traditional cookie bars. Plus, you can add them to your holiday cookie platter along with gluten-free sugar cookies, and vegan gingerbread cookies. 

 

When did M&M cookies come out?

Ingredients

  • 1 cup (2 sticks) Unsalted Butter

     

  • 1 cup Brown Sugar Substitute

     

  • 3/4 cup Granulated Sugar-Substitute

     

  • 1 large Egg

     

  • 1 large Egg Yolk

     

  • 1 teaspoon Vanilla Extract 

     

  • 2 1/3 cups Gluten-Free All-Purpose Flour

     

  • 1 teaspoon Baking Soda

     

  • 1/4 teaspoon Fine Sea Salt

     

  • 1 1/2 cups Semi-Sweet Chocolate Chips

     

  • 2 cups M & M's

Instructions

Preheat the oven to 350 °F. Next, with parchment paper, line a 9x13 baking pan. 

Prepare baking pan

Place the butter into a large bowl, along with the brown sugar substitute and granulated sugar substitute. Until it is fluffy beat it with a hand mixer.

Mix in the egg, egg yolk, and vanilla extract.

To a medium bowl, add the gluten-free all-purpose flour, baking soda, and sea salt in a medium bowl and whisk until combined, before folding it into the butter and sugar mixture.  



 

Prepare dry ingredients

Next, until combined, mix in the chocolate chips and M&M's.

Using a prepared baking pan, place the cookie dough. Using a spatula, spread it into an even layer.

Bake the M&M cookie bars for 22-25 minutes until they are slightly golden around the edges. 

 

Bake the M&M Cookie Bars

Remove the M&M cookie bars from the oven and let them cool for at least 15-20 minutes before cutting them into 12 bars.
