Sometimes, you want a decadent treat - like chocolate cookies straight from the oven. But your traditional chocolate cookie is packed with carbs. That's where these Keto Chocolate Cookies come to the rescue. The cocoa powder and sugar-free chocolate chips make them rich and extra "chocolatey" - without all the carbs. Plus, they're packed with fiber, so you feel full after eating just one. They're also effortless to make. It takes less than 20 minutes to make these cookies. Enjoy it with your favorite hot drink.

Ingredients

  • 1 cup Almond Flour

  • 1/2 teaspoon Baking Powder

  • 3 tablespoons Cocoa Powder

  • Pinch Salt

  • 3 tablespoons Granulated Erythritol

  • 1 Medium Egg

  • 4 tablespoons Butter, softened

  • 1/2 teaspoon Vanilla Extract

  • 5 tablespoons Sugar-Free Sugar Chocolate Chips (85% Dark Chocolate or higher)

Instructions

Preheat the oven to 350 °F. On a large baking sheet, line the parchment paper.

Add almond flour, baking powder, cocoa powder, salt, and granulated erythritol to a large mixing bowl. Mix well.

Add egg, softened butter, and vanilla extract, mixing with a fork until the dough is smooth.

Add chocolate chips, reserving a few for topping. Mix well.

Use the dough to form 10 cookies.

Place the cookies on the prepared baking sheet, flattening slightly.

Top cookies with the rest of the chocolate chips.

Bake for about 14 minutes, until just set.

Remove from oven and let cool before serving.
