Tzatziki is a staple in Greek cuisine. This Vegan Tzatziki is cool, luscious, and contains no dairy. Instead, we used unsweetened coconut yogurt to give a rich, creamy texture. We also used finely grated cucumbers for consistency and refreshing this sauce. The fresh lemon juice adds a nice touch of acidity, while the fresh garlic adds savory. Then we balanced out the flavors with a bit of salt and pepper. Lastly, we added fresh dill for that earthy, herbaceous taste you expect in traditional Tzatziki. This Vegan Tzatziki is delicious on its own, or you can pair it with cut veggies, pita bread, or veggie skewers.

Tip: Instead of using Unsweetened Coconut Yogurt, you can use Unsweetened Soy Yogurt instead.

Ingredients

  • 1/2 Large Cucumber

  • 1 1/2 cups Unsweetened Coconut Yogurt

  • 3 Medium cloves Garlic, minced

  • 1/4 cup Fresh Dill, finely chopped (plus extra for garnish)

  • Juice of 1/2 a Lemon

  • 1/4 teaspoon Salt

  • 1/8 teaspoon Pepper

  • 1 tablespoon Olive Oil

  • Fresh Mint Leaves for garnish (Optional)

Instructions

Using a box grater, finely grate the cucumber. Using your hands or a clean dishcloth, remove the excess moisture from the grated cucumber.

Add the strained cucumber, unsweetened coconut yogurt, garlic, fresh dill, lemon juice, salt, pepper, and olive oil to a large mixing bowl. Mix well.

Place in a serving bowl, garnishing with remaining dill and fresh mint leaves.
