How to make Cucumber Juice

Caribbean people are no strangers to hot and humid weather but with the help of some fresh Cucumber Juice, you will find yourself cooling right down. The combination of cucumber, lime and ginger make this juice the perfect way to quench your thirst and save you from our Caribbean climate. Additionally, this juice makes a great cocktail!

Ingredients

  • 2 kg Cucumber

  • 600 grams of Brown Sugar

  • 1 thumb of Ginger (2-3 inches long)

  • 300 ml Lime Juice

  • 2000 ml Water

  • Pinch of Salt

  • Cocktail option with 2 ounces White Rum or Vodka

Instructions

Wash, peel and chop up the cucumber.

Place the cucumber chunks into the blender and begin to pulse before you increase to full speed and liquefy the cucumber adding the water when necessary.

Using a strainer or cheesecloth to remove all the pulp from the liquid. Discard the pulp and place liquid into a juice jug or pitcher.

Taking the back of a knife, rub away the peel from the ginger then finely grate it and add it to the cucumber water mixture.

In the juice jug, add the lime juice, pinch of salt and any remaining water stirring to combine.

Add 100 grams of brown sugar to the juice, stir until completely dissolved and then taste; Continue this process until the juice is sweetened to your preference.

Allow to chill before serving or pour over ice.

Cocktail Option: Add 2 oz of White Rum or Vodka to a glass with ice, top with the juice and stir to combine.
