Ingredients

Chimichurri
  • 1/4 cup Parsley Leaves

  • 1/4 cup Cilantro Leaves

  • Juice of 1/2 Lime

  • 2 Garlic Cloves

  • 1/2 small Red Onion

  • 1/2 Jalapeño, seeds removed

  • 2 tablespoons Olive Oil

  • 1/8 teaspoon Salt

  • 1/4 teaspoon Black Pepper

Burger Patties
  • 1 pound 80/20 Ground Chuck

  • 1 teaspoon Garlic Powder

  • 1 teaspoon Onion Powder

  • 1/2 teaspoon White Pepper

  • 1 teaspoon Salt

  • 4 slices White Cheddar Cheese

Smashed Avocados
  • 1 medium Avocado

  • Juice of 1/2 a Lime

  • 1/8 teaspoon Salt

  • 1/8 teaspoon Black Pepper

To Assemble
  • 1/2 small Red Onion, thinly sliced

  • 4 Keto or Gluten-Free Burger Buns

Instructions

Chimichurri

Place the chimichurri ingredients into a food processor and pulse until the ingredients are finely minced and combined.

Pour the chimichurri into a small bowl, cover it with plastic wrap and set it aside until the burgers are cooked.

Burger Patties

Add the ground chuck into a large bowl along with the garlic powder, onion powder, white pepper, and salt. Mix it with your hands until it is combined. Do not overmix the burger mixture.

Divide the mixture into four sections. Grab one area of the meat and roll it into a small ball using your hands.

Flatten the ball slightly and shape it into a patty that is 1/2 inch thick. Place the burger onto a plate and repeat with the remaining 3 sections.

Place a large cast-iron skillet on the stove. Turn it to medium-high heat. Add the burger patties to the skillet and cook them for 3-4 minutes. Turn the burgers over and cook them for another 4 minutes.

Add a slice of white cheddar cheese to each burger and cook the burgers for another 1-2 minutes until the cheese melts.

Remove the burgers from the skillet and place them onto a plate. Let the burgers rest for 2 minutes.

Place the avocado, lime juice, salt, and pepper into a small bowl, and smash with a fork until it reaches your desired texture.

Place the bottom burger buns onto a serving platter. Spread the smashed avocados onto each bun.

Add the burgers on top of the smashed avocados. Add 1-2 tablespoons of chimichurri to each burger and top with the sliced onions and the top bun.
