Conventional Oven - Preheat the oven at 400 F/ 204 C and place a rack in the middle of the range. Prepare a wire baking rack on top of a baking sheet or tray for cooking the okra.
Air fryer - Preheat the air fryer at 400 F/ 204 C.
Wash, rinse, and pat dry the okra, cut off the tops, slice in half lengthwise, and place into a bowl.
Coat the okra with coconut oil
Mix the arrowroot starch, salt, garlic, onion, black pepper, and paprika in a small bowl.
 Toss the boiled okra in the seasoning mixture, making sure to coat each piece evenly.
Arrange the okra pieces onto the cooking surface, wire baking rack, or air fryer tray, and space them out evenly, so they will have room to cook and crisp.
Cook for 5 minutes, then turn the okra pieces over and cook for another 5 minutes or until golden and crispy.
Remove from the oven or air fryer and serve warm with your choice of dipping sauce.
