Nothing hits the spot like a delicious BBQ Chicken Sandwich. So instead of cooking it low and slow in the crockpot, we did it in the instant pot. We added chicken broth and onions to an instant pot, then seasoned the chicken with our BBQ chicken dry rub before placing it on top of the onions. We cooked the chicken for 10 minutes, tossed it with BBQ sauce, then put it onto pillowy soft buns along with sweet and refreshing coleslaw.
