Nothing hits the spot like a delicious BBQ Chicken Sandwich. So instead of cooking it low and slow in the crockpot, we did it in the instant pot. We added chicken broth and onions to an instant pot, then seasoned the chicken with our BBQ chicken dry rub before placing it on top of the onions. We cooked the chicken for 10 minutes, tossed it with BBQ sauce, then put it onto pillowy soft buns along with sweet and refreshing coleslaw. 
 

What goes good with BBQ chicken sandwiches?

Many foods pair well with BBQ chicken sandwiches. The most common sides are sweet potato fries, regular fries, baked beans, potato chips, fried or regular pickles, and so much more.   

Can I eat chicken everyday?

Consuming too much of any food is not advised, and the same idea applies to chicken. Nevertheless, you can consume chicken every day. However, you should pay attention to the cut of chicken you are cooking. Some reductions are fattier than others. For example, the drumstick is fatter than the breast, and the skin is the heaviest part of the chicken. In addition to this, you should be mindful of how the chicken is cooked. For example, eating fried chicken every day is probably not a good thing.

Nothing beats the flavor combination of BBQ chicken and creamy coleslaw! There's also the classic pairing of potatoes either salad or mashed potatoes as well. 

Is Grilled chicken Healthy?

Yes, grilled chicken is considered to be a healthy protein to add to your diet. The breast will be the leanest cut, containing less fat than the legs or thighs. Be sure to purchase high quality chicken, preferably free-range & organic without and hormones added or antibiotics.

Instructions

Coleslaw
To a medium bowl, add coleslaw mix, mayonnaise, lemon juice, sugar, salt, and pepper, and toss to combine. Cover the coleslaw with plastic wrap. Place the coleslaw in the fridge until you are ready to use it.   
BBQ Chicken
To a large bowl, add chicken. Pour the olive oil over the chicken and toss to coat. Add the BBQ chicken dry rub to the chicken and toss to combine. Set the chicken aside.  
Add the chicken broth and onions to the bottom of your instant pot. Add the chicken to the instant pot. Place the cover on top of the instant pot and set it to seal. Cook the chicken on high pressure for 8-10 minutes.   
Let the instant pot release naturally. Remove the cooked chicken from the instant pot and set it on a plate. Discard the liquid and onions from the instant pot. Next, shred the cooked chicken with two forks and return it to the instant pot. Add the BBQ sauce to the shredded chicken and stir to combine. 
Sandwich
Cut the buns in half with a sharp knife. Toast them if desired. Place the bottom buns onto a serving platter. Top with the BBQ chicken, a tablespoon of BBQ sauce, and coleslaw, then add the top bun on top of the BBQ chicken sandwiches. Serve and enjoy!
