Instructions

Grilled Jerk Chicken
Begin by making the Jamaican Jerk Sauce recipe Homemade Jamaican Jerk Sauce | Classic Bakes
Using a large bowl, coat the chicken thighs in 3/4 cup of the jerk sauce, reserving the remaining 1/4 cup of jerk sauce for basting the chicken. Place the marinated chicken into a Ziploc bag or covered dish and marinate overnight or for a minimum of 3 hours. 
Fire up your grill to medium heat about 375 degrees Fahrenheit. If you're not equipped with a grill you can use a heavy-bottomed pan onto your stovetop or griddle on the same heat. 
Remove chicken from marinade placing the chicken onto a tray, scrape off & discard some of the marinades, so the chicken doesn't burn during the cooking process. 
Spray the grill or stovetop pan with cooking spray and add the chicken thighs. Cook the chicken rotating it 1/4 turns to create the grid like pattern on the grill or sear each side in a pan. Cook for 5-6 minutes per side flipping and rotating to ensure the chicken doesn't burn. The Jerk sauce contains a high amount of sugar and spices so will char quickly. 
Once the chicken has reached 165 degrees Fahrenheit on a kitchen thermometer. An alternative to using a thermometer would be to crack the center of the chicken open, if its no longer pink in the center with clear juices running from the chicken, it's ready. Remove from the grill or stovetop and let rest while coating each side with the remaining jerk sauce with a pastry brush
Once the chicken is removed, clean off the grill or pan, and spread the bread with butter & toast on either side. Then, setting them aside for assembly. 
Coleslaw Dressing
Combine all ingredients in a small bowl, using a whisk to combine all the ingredients and dissolve the sugar. Set aside. 
Lime and Mango Coleslaw
Using a medium-sized bowl add coleslaw ingredients and dressing to the bowl. 
Toss together, setting it aside to marinate for 5 minutes. 
Pickapeppa Aioli
In a small bowl, whisk together mayonnaise and pickapeppa sauce. Set aside. 
Best Homemade Chicken Sandwich Assembly
Lay out all the toasted bread or buns
Spread a layer of Pickapeppa aioli on each side of the bread. Slice the grilled jerk chicken and evenly distribute it onto each sandwich. Top each sandwich with coleslaw. 
Serve on a sharing platter or individual plates for everyone to dig into and enjoy!
