To make this Lettuce Sandwich Wrap, we seared chicken breast until golden, then tucked it into romaine lettuce leaves. We also added a few slices of organic turkey and English cucumbers to add a bright and refreshing flavor to the lettuce sandwich wrap. It is topped with a simple yet flavorful mayonnaise-based dressing, then rolled up and secured with scallions, so it doesn't fall apart. Overall, this lettuce sandwich wrap will keep you satiated without adding carbs to your diet.

Instructions

For The Chicken:
Place chicken breast into a medium bowl and season with salt, pepper, and garlic powder. 
In a cast-iron skillet, add olive oil and place over medium-high heat.   
Add seasoned chicken breast and cook for 3-5 minutes. Turn chicken breast over and cook for an additional 4-5 minutes. Remove cooked chicken breast from skillet and set aside.  
For The Sauce:
Whisk Dijon mustard, keto mayonnaise, white wine vinegar, lemon juice, salt, white pepper, and sugar-free sweetener in a small bowl. Set aside
To Assemble:
Place parchment paper on your workstation. 
Remove 4 large leaves from the head of romaine lettuce. Wash and dry them. 
Arrange the romaine lettuce onto the parchment paper. 
Fold a slice of turkey in half. Place the turkey on top of a romaine leaf. Add three pieces of English cucumber, 1/4 of the chicken breast, and two tablespoons of the sauce.
Beginning with one end, fold the lettuce over the filling and tie it with one scallion to keep it secured.
Repeat steps 1 & 2 until you have four lettuce wrap sandwiches.
