Ingredients

  • 1/3 cup Raw Cashews

  • 2 tablespoons Avocado Oil

  • 1 lb boneless, Skinless Chicken Breasts, cut into chunks

  • 1 Medium Red Bell Pepper, diced

  • 2 Celery stalks, chopped

  • 1/2 cup Mushrooms, sliced

  • 1/2 Medium Onion, diced

  • 1 Garlic Clove, minced

  • 1 tablespoon Gluten-Free Chili Garlic Sauce

  • 1 teaspoon Ground Ginger

  • 1/4 teaspoon Salt

  • 1/2 teaspoon Pepper

  • 1 tablespoon Liquid Aminos

  • 1 tablespoon Rice Wine Vinegar

  • 1 tablespoon Sesame Oil

Instructions

Toast the cashews in a wok over low heat for about 8 minutes, then remove cashews from wok.

Add avocado oil to wok, increasing heat to high. 

Once avocado oil is hot, add the chicken and cook for about 5 minutes until cooked through.

Add red bell pepper, celery, mushrooms, onions, garlic, chili garlic sauce, ground ginger, salt, and pepper. Cook for about 3 minutes.

Add liquid aminos, rice wine vinegar, sesame oil, and cashews. Cook until the sauce thickens. 

Serve on a plate with low-carb noodles.
