We love Beef Fajitas, as we're sure many of you do too. But sometimes, you want to shake things up. These Keto Chicken Fajitas definitely shake things up. Tender chicken and vibrant, crunchy red onions and bell peppers are tossed in a homemade Fajita seasoning. Then they're simmered in savory chicken broth for a dish the whole family will love. Best of all, they contain just 8.4 grams of net carbs per serving and are ready in just 30 minutes. What more could you want?

Ingredients

For Fajita Seasoning:
  • 1 teaspoon Dried Oregano

  • 1 teaspoon Chili Powder

  • 1/4 teaspoon Ground Cumin

  • 1/4 teaspoon Garlic Powder

  • 1/2 teaspoon Salt

  • 1/2 teaspoon Pepper

For Fajitas:
  • 3 tablespoons Olive Oil, divided

  • 1 Red Onion, sliced

  • 1 Red Bell Pepper, sliced

  • 1 Yellow Bell Pepper, sliced

     

  • 1 Green Bell Pepper, sliced

  • 1 lb Chicken Breast, thinly sliced

  • 1/4 cup Chicken Broth

  • Lime wedges for garnish (Optional)

Instructions

Fajita Seasoning Preparation:

Place all the ingredients for the Fajita Seasoning in a bowl. Mix well.

Fajitas Preparation:

In an iron skillet over medium-high heat, add two tablespoons of olive oil.

Once the oil is hot, add red onions, red, yellow, and green bell peppers. Sauté for about 5 minutes.

Place bell peppers and red onions on a plate.

Add the remaining one tablespoon of olive oil to the skillet.

Once the oil is hot, add chicken slices and sauté for about 8 minutes, until the chicken is cooked.

Add chicken broth and Fajita seasoning to the skillet, bring to a boil, and then reduce the heat to a simmer.

Add bell peppers and red onions to the skillet.

Heat for 5 minutes.

Plate Chicken Fajitas, garnishing with lime wedges. Serve with low-carb tortillas or cauliflower rice.
