Ingredients

Chicken Lettuce Wraps Sauce
  • 3 tablespoons Sugar-Free Maple Syrup (I used Lakanto Maple-Flavored Syrup) 

     

  • 1/4 teaspoon Salt

     

  • 2 tablespoons Soy Sauce

  • 1 tablespoon Sugar-Free Ketchup

  • 1 teaspoon Apple Cider Vinegar

  • 1 1/2 tablespoons Sugar-Free Sriracha

  • 2 cloves Garlic, minced

  • 1 tablespoon Tamari

  • 1 tablespoon Coconut Aminos

  • 1/4 cup Chicken Broth

Chicken Lettuce Wrap
  • 2 tablespoons Sesame Oil

     

  • 4 Boneless Skinless Chicken Thighs, cut into 1/2-inch pieces

  • 2 Shallots, minced

     

  • 1 tablespoon Ginger grated

     

  • 4 cloves Garlic, minced

  • 1/4 cup Unsalted Cashews

     

  • 18 Butter Lettuce Leaves

  • 2 Spring Onions, green parts only, chopped

     

  • 1/4 cup shredded Carrots

Instructions

Chicken Lettuce Wraps Sauce

Add sugar-free maple syrup, salt, soy sauce, sugar-free ketchup, apple cider vinegar, sugar-free sriracha, garlic, tamari, coconut aminos, and chicken in a large bowl broth, and whisk to combine.

In a wok or pan, add the sesame oil. Set over medium-high heat. 

Add shallots, garlic, and ginger, and cook for 2 minutes until the shallots soften.

Add the chicken thighs and cook it for 8 minutes, periodically stirring, until the chicken is browned. 

Add the sauce and stir to coat the chicken in the sauce. Cook the chicken for an additional 5-8 minutes until it has a temperature of 165 °F and most of the sauce evaporates.  

Add the cashews and remove the chicken from the stove. 

Arrange butter lettuce leaves on a serving platter and add three tablespoons of the chicken to each lettuce cup.

Garnish the chicken lettuce wrap with the green onions carrots before serving. Do not add too many carrots to the chicken lettuce wraps. They are keto- friendly, but they contain higher sugar levels than other leafy greens.
