This recipe will show you how to make Veggie Fajitas for a flavorful meal perfect for the vegetable lover in us all. The main star of this recipe is the mushrooms. They are a delicious source of plant-based protein with their rich earthy flavor. We have also loaded up these fajitas with fresh herbs, seasonings and top it all off with some homemade guacamole. This dish is sure to have everyone’s mouth-watering from the delightful aromas that will be coming from your kitchen.

Ingredients

Fajitas
  • 6 Flour Tortillas

  • 2 tablespoons Extra Virgin Olive Oil

  • 1 Red Onion - diced

  • 3 cloves Garlic Minced

  • 3 Bell Peppers - different colors & julienne cut

  • 4 ounces Portobello Mushrooms, sliced 

  • 1 teaspoon Paprika

  • ½ teaspoon Cumin

  • 2 teaspoons Red Pepper Flakes

  • Salt & Black Pepper to taste

Guacamole
  • 2 Avocado

  • 1  Lime juiced

  • Salt & Black Pepper to taste

Instructions

Guacamole

In a bowl, mix and mash the avocado and lime juice, using a fork.

Season with salt and black pepper to taste and serve.

Tortillas

Preheat the oven 400 °F/ 204 °C and place a rack in the middle of the oven.

Prepare a baking tray or sheet with some parchment paper and place the tortillas onto the tray.

Bake for 5 minutes to warm the tortillas.

Fajita Filling

Using a large deep skillet add the olive oil and bring to medium heat.

Once the oil is hot, add the mushrooms, onion, garlic, bell peppers, and sauté for 3 minutes.

Add the paprika, cumin, red pepper flakes, and sauté for 5-10 minutes or until the vegetables are fork-tender.

Season with salt and black pepper and remove from the heat.

Place equal portions of the vegetable mixture on each tortilla, then top with a dollop of guacamole on top and enjoy.
