It is made with chilled watermelon cubes, vanilla Greek yogurt, honey, unsweetened almond milk, and fresh lime juice. So it's creamy, sweet, and has some zing. And is ultra-hydrating. That's because watermelon is almost 92% water. Watermelon is also packed with vitamins that boost your immune system and lycopene, which is good for your heart. Besides enjoying this drink with your friends, it also makes a great post-workout drink. That's because watermelon contains citrulline, which relieves muscle soreness.

It is OK to drink watermelon juice every day if you drink it in moderation. However, if you drink too much of it each day, you could consume too much lycopene, resulting in diarrhea, indigestion, and bloating.

Ingredients

  • 3 cups Watermelon, cut into 1-inch cubes, chilled

  • 1/4 cup Vanilla Greek Yogurt

  • 1/2 tablespoon Honey

  • 1/3 cup Unsweetened Almond Milk (plus more as needed to blend)

  • Juice of 1/2 a Lime

  • Fresh Mint Leaves for garnish (Optional)

Instructions

Place all the ingredients (except the mint leaves) in a high-speed blender. 

Blend until smooth, adding more almond milk if the consistency is too thick.

Serve in glasses, topped with fresh mint leaves.
