It is made with fresh ingredients, seasoned to perfection, and ready in no time. We have chosen to use sun-dried tomatoes in oil for added flavor and use the oil to enhance the dressing. Ingredients

  • 16 ounces Pasta Penne or Fusilli

  • 1/2 Red Onion - sliced

  • 1/4 cup Sun-dried tomatoes - in oil sliced

  • 2 Bell pepper - julienne cut

  • 1/4 cup Black olives - sliced

  • 1/4 cup Parsley leaves - chopped

Dressing
  • 100 ml Oil from the Sun Dried Tomatoes

  • 1 tablespoon Tahini

  • 2 tablespoons Red wine vinegar

  • 2 cloves Garlic - minced

  • 1 teaspoon Chives - minced

  • ½ teaspoon Oregano - dried

  • ¼ teaspoon Red pepper flakes

  • Salt & Black Pepper to taste

  • Brown Sugar To taste

Instructions

Mix the dressing ingredients in a small bowl, season with salt, black pepper, and sugar, then set aside to marinate.

Cook the pasta in a pot according to the instructions on the package, then strain. .

While the pasta cooks, prepare the red onion, sun-dried tomatoes, bell pepper, black olives, and parsley into a large bowl.

Tossing it with the salad ingredients and dressing once the pasta is cooked and cooled.

Serve the salad chilled or as is in and place in a salad bowl and enjoy.
