A chopped salad is an excellent option when feeding a large group of people because all the ingredients are chopped to create an even mixture throughout the dish, hence the name. Now for this recipe, we are taking the chopped salad concept and elevating it to a Delicious Mexican Chopped Salad with various uses. With the combination of your favorite fresh ingredients that Mexican cuisine is known for, this salad can be used with tacos, enchiladas, quesadillas, burritos, or any other traditional Mexican dish. You can even add some Carne Asada or grilled chicken for a healthy balanced meal. Get creative and use this to top a burger or grilled chicken sandwich. The possibilities are endless with this mixture of fresh herbs, vegetables, and black beans tossed with a zesty lime dressing.

Ingredients

Dressing
  • 60 ml Lime Juice

  • 2 tablespoons Agave Syrup

  • ½ teaspoon Cumin

  • ½ teaspoon Smoked Paprika

  • 3 cloves Garlic - minced

  • 3 tablespoons Extra Virgin Olive Oil

  • Salt & Black Pepper to taste

Salad
  • 1 lb Swiss Chard - chopped

  • 1 Red Onion - diced

  • 1 Orange Bell Pepper -diced

  • 1 medium Zucchini - diced

  • 5 large Tomato - diced

  • 11 ounces Canned Sweet Corn - strained & rinsed

  • 15 ounces Canned Black Beans - strained & rinsed

  • 1/2 bunch Cilantro - chopped

  • 1 Jalapeno - seeded & diced

  • 1 large Avocado - diced

Instructions

Dressing

Into a small bowl mix the lime juice, agave, cumin, paprika and garlic together using a whisk.

Whisk in the oil, season with salt and pepper, then let rest and marinate before adding to the salad.

Salad

While the dressing is marinating, on a cutting board chop all the ingredients and place them into a large bowl.

Once everything is chopped, drizzle the dressing and toss to spread throughout the salad.

Serve chilled in a salad bowl on its own or be creative and use as you like with any dish you choose.
