This recipe for Cucumber and Tomato Salad is an excellent addition to any summer meal. Cucumber and Tomato are the ideal choices to add to your meal when trying to beat the heat with a healthy treat. This salad is a super moist and refreshing combination of flavorful ingredients that are sure to add a pleasant cooling element for those hot summer days.
- 1 large Cucumber
- 4 large Tomato
- 1/4 Red Onion
- 2 tablespoons Parsley
- ¼ teaspoon Cumin
- ¼ teaspoon Allspice
- ½ teaspoon Garlic Powder
- 1 tablespoon Lime Juice
- 2 tablespoons Extra Virgin Olive Oil
- Salt & Pepper to taste
Into a small bowl whisk the lime juice, oil, cumin, allspice and garlic powder together and set aside to marinate.
While the dressing is marinating, cut up the cucumber, tomato, onion and parsley and place into a large bowl.
Add the dressing mixture to the bowl of salad ingredients and toss to coat thoroughly and serve chilled.
