When it's scorching hot outside, you want to cool down with a cool refreshing drink. This Vegan Mango Lassi is creamy, rejuvenating, and flavorful. We used frozen mangos just in case you don't have access to fresh mangos. Mangos add sweet and tart tropical flavors and contain immune-boosting nutrients like vitamin C, copper, and folate. We also used lite coconut milk to give creaminess without all the calories. The addition of coconut yogurt adds even more coconut flavors. The fresh lime juice's tanginess and the maple syrup's sweetness round out this drink.
Tip: For even more coconut flavors, feel free to top with unsweetened shredded coconut.
- 2 cups Frozen Mango
- 3/4 cup Lite Coconut Milk
- 1/4 cup Plain Unsweetened Coconut Yogurt
- Juice of 1/2 a Lime
- Pinch of Salt
- 1 tablespoon Maple Syrup (or to taste)
- Fresh Mint for garnish (Optional)
In a high-speed blender or food processor, add frozen mango, coconut milk, unsweetened coconut yogurt, lime juice and salt. Blend until creamy and smooth, ensuring you scrape the sides if needed.
