Imagine taking that slow winding drive along Trinidad's north mountain coast and coming upon a roadside vendor with a display of glass jars filled with fruit swimming in a colorful mixture of herbs and peppers. This unmistakable sight is where you will find the illustrious Mango Chow! It is made by taking chunks of green mango and marinating it in a magical blend of fresh local Trini herbs and peppers. Each crisp bite of mango crunches in your mouth with an intense burst of sweet, savory, fresh, tangy, and spicy flavors that will have you sucking your teeth in pain and pleasure. We consider our Mango Chow the 'BEST' because we have found a way to add spice while leaving heat as an option.

Instructions

Peel and roughly chop the mangos avoiding and discarding the seed.

In a bowl, toss together the chunks of mango, chadon beni, garlic, seasoning peppers, ginger, onion powder with the juice from the lime.

Add salt and black pepper to taste.

Spicy Option: Add scotch bonnet pepper or pepper sauce to taste and tolerance in Step 2.

Vinegar Option: Used as a replacement for lime and will give a different flavor.

Hi Manda. Thanks for your interest in our recipe. Seasoning peppers are pimento peppers. They resemble hot peppers but have little to no heat. They are used to add flavor to food, hence the name seasoning peppers. If you cannot find seasoning peppers, you can use 1/2 medium red bell pepper instead.
