Most cucumber salads contain onions, tomatoes, and vinegar. However, we used fresh mint and sesame seeds instead of making a Vegan Cucumber Salad with the same old bland ingredients. Although cucumbers are used as a vegetable, botanically speaking, they are considered a fruit. This is because they contain tiny seeds and grow from the plant's flower. 

Cucumbers are cool and refreshing. So it's no wonder that they are the perfect fruit to make a salad. This healthy ingredient is low-calorie and contains several beneficial compounds, including vitamins, minerals, and antioxidants. In addition, cucumbers stimulate hydration, can support weight loss, and may even decrease blood sugar levels.

Ingredients

  • 4 tablespoons Olive Oil
     

  • 4 tablespoons fresh Lime Juice
     

  • 1 teaspoon Salt

  • 1/2 teaspoon Black Pepper 
     

  • 1 teaspoon Garlic Powder 
     

  • 2 medium Cucumbers, thinly sliced 
     

  • 1/2 cup Fresh Mint Leaves, roughly chopped or torn minced
     

  • 2 tablespoons White Sesame Seeds

Instructions

In a medium bowl, add lime juice. Gradually stir in the olive oil while constantly whisking until it is emulsified and well mixed.

Whisk in the salt, black pepper, and garlic powder.

Add cucumbers, mint leaves, and sesame seeds and toss to combine.

Cover the cucumber salad with plastic wrap and chill in the fridge for an hour to allow the flavors to develop.
