











Most cucumber salads contain onions, tomatoes, and vinegar. However, we used fresh mint and sesame seeds instead of making a Vegan Cucumber Salad with the same old bland ingredients. Although cucumbers are used as a vegetable, botanically speaking, they are considered a fruit. This is because they contain tiny seeds and grow from the plant's flower.
Cucumbers are cool and refreshing. So it's no wonder that they are the perfect fruit to make a salad. This healthy ingredient is low-calorie and contains several beneficial compounds, including vitamins, minerals, and antioxidants. In addition, cucumbers stimulate hydration, can support weight loss, and may even decrease blood sugar levels.

- 4 tablespoons Olive Oil
- 4 tablespoons fresh Lime Juice
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Garlic Powder
- 2 medium Cucumbers, thinly sliced
- 1/2 cup Fresh Mint Leaves, roughly chopped or torn minced
- 2 tablespoons White Sesame Seeds
