As a bonus, this Vegan Cream of Celery Soup contains less sodium than typical soups. That's because we used low-sodium vegetable stock instead of regular vegetable stock. Ingredients

  • 2 tablespoons Olive Oil

  • 1 medium Yellow Onion, diced small

  • 12 stalks Celery, diced small

  • 4 Garlic cloves, minced

  • 4 cups Low-Sodium Vegetable Stock

  • 1/2 teaspoon Salt

  • 1/2 teaspoon Black Pepper

  • 1/2 teaspoon dried Thyme Leaves

  • 1 Bay Leaf

  • Juice of 1/2 a Lemon

  • 1/3 cup full-fat Coconut Milk

  • Celery leaves for garnish (Optional)

Instructions

To a large pot over medium heat, add olive oil. Once hot, add the onion and celery, sautéing for 10 minutes.

Add the garlic and sauté for one to two minutes.

Add low-sodium vegetable stock, salt, black pepper, dried thyme leaves, and bay leaf. Bring to a boil, then let simmer covered for 20 minutes.

Remove the soup from heat and discard the bay leaf.

Stop cooking and remove the bay leaf

Add the lemon juice and coconut milk, then blend the soup using an immersion blender until creamy.
