This quick, refreshing, chilled Avocado Soup makes the perfect appetizer or light entrée on a hot summer's day. All you need is vegetable stock, fresh limes, ripe avocados, cucumbers, garlic, cilantro, cumin, and a pinch of sea salt. Everything is blended until smooth, then garnished with crunchy pumpkin seeds, pepitas, sliced cherry tomatoes, and cilantro leaves. Avocado Soup
  • 4 cups Vegetable Stock

  • 2 large Avocados, peeled and pitted

  • 2 Limes, juiced

  • 1/4 cup Cilantro, roughly chopped

  • 1 large Cucumber, peeled, diced

  • 1 clove Garlic, chopped

  • 1 teaspoon Ground Cumin 

  • 1/2 teaspoon Sea Salt

Avocado Soup Garnish
  • 2 tablespoons Pumpkin Seeds, shelled, toasted 

  • 8 Cherry Tomatoes, sliced

  • 1 tablespoon Cilantro Leaves 


Avocado Soup

Place all the Avocado Soup ingredients into a blender, and blend until smooth. Chill in the fridge for 30 minutes.

Avocado Soup Garnish

Pour the soup into bowls, then garnish each bowl with pumpkin seeds, sliced cherry tomatoes and cilantro leaves. Serve chilled.
