Ingredients

For Salad:
  • 4 cups Baby Spinach 

  • 1 Cucumber, thinly sliced

  • 2 Beets, thinly sliced

  • 2 Radishes, thinly sliced

  • 1/2 Red Onion, thinly sliced

For Dressing:
  • 2 tablespoons Balsamic Vinegar

  • 2 tablespoons Olive Oil

  • 1 tablespoon Honey

  • 1 teaspoon Dijon Mustard

  • 1 clove of Garlic, minced 

  • 1/4 teaspoon Salt

  • 1/4 teaspoon Pepper

Instructions

Add baby spinach, cucumber, radishes, beets, and red onions to a large bowl, tossing lightly.

Add balsamic vinegar, olive oil, honey, Dijon mustard, garlic, salt, and pepper to a small bowl, mixing well.

Plate salad and place dressing in serving bowls.
