The rich and divine combination of chocolate and hazelnuts made Pietro Ferrero famous in 1964 when Nutella was first put onto the market. From the small town of Alba, Italy, where white truffles and hazelnuts are abundant, to now an essential pantry staple in many households around the globe. 

Nutella is often added to sweet treats such as gelato, cakes, cookies, doughnuts, granola, pudding, waffles, French toast, and pancakes. But have you ever experienced the wonder that is Nutella Stuffed Pancakes? When cut open, the Nutella oozes out like lava and is delicious with fresh strawberries from the market. To create balance in your diet and make these stuffed pancakes healthier, sprouted grain flour is chosen instead of all-purpose flour. Using a combination of whole wheat berries, spelled and brown rice kernels are grown and then milled into flour. The bonus of using sprouted grains versus whole grains is that you get the added benefits of easier digestion and absorption of nutrients, and sprouted grains provide a sweeter and slightly nutty flavor when cooked. 

Sprouted flour can be substituted for any flour using a 1:1 ratio. The rest of the batter contains baking powder, almond milk, egg, and melted butter, sugar is skipped for this mixture as the Nutella stuffing can be sweet enough. However, add a few sugar tablespoons if you have a sweet tooth. Nutella is then piped between layers of pancake batter and severed with strawberries. 

How do you make Nutella stuffed mini pancakes?

You can use a few different methods to make Nutella stuffed pancakes. Nutella can be scooped out into disks, frozen for a few hours to firm it up, then sandwiched between layers of pancake batter. The Nutella can be placed into a piping bag and squeezed onto the pancake batter, coated with another layer of batter before it's flipped over. Or the easiest way is to cook off all your pancakes and swipe a spoonful of Nutella on a pancake while stacking another pancake on top.  

Can you eat pancakes with Nutella?

Yes, you can most definitely eat pancakes with Nutella. Pancakes can be stuffed or layered with Nutella, melted with some cream to make a sauce, or swirled Nutella into the batter for a pleasing effect. 

How do you make Nutella pancakes without eggs?

There are several ingredients that can be added to replace eggs in recipes. For example, bananas, apple sauce, avocado, soaked flax seed meal, or egg replacers can all be used in your favorite recipes. 

How do you melt Nutella?

To melt Nutella, start by adding a few tablespoons of cream to Nutella and melt while stirring over a double broiler or at 10-second intervals in the microwave.

Ingredients

  • 1 1/2 cup Sprouted Grain Flour 

  • 2 1/2 teaspoons Baking Powder

  • 1/4 teaspoon Sea Salt 

  • 2 tablespoons Unsalted Butter, melted 

  • 1 1/4 cup Unsweetened Almond Milk 

  • 1 large Egg 

  • 12 tablespoons Nutella 

  • Non-Stick Cooking Spray 

  • 1 cup Strawberries, cut in half

Instructions

On the stovetop, preheat a large non-stick pan setting it medium-low heat.

Place the Nutella into a disposable piping bag, cutting off the tip, so the Nutella can be squeezed out smoothly. 

Add the sprouted flour, baking powder and salt into a mixing bowl, mix together using a whisk. 

Add the egg, milk, and melted butter to a separate mixing bowl, whisking to incorporate. 

Slowly pour and whisk the wet ingredient into the dry ingredient until the batter is all mixed with little to no lumps. 

Coat the non-stick pan with cooking spray. Add 1 heaping tablespoon of batter at a time, depending on the size of your pancake only 3-4 pancakes will be able to be made at a time to ensure even cooking and that the pancakes don't all stick together.  

Once you see the batter start to foam and bubble up after about 30-45 seconds, pipe a squeeze of Nutella onto the pancake and coat the top with just enough batter to cover the Nutella. Allow the pancake to cook for another 2 minutes before carefully flipping them over & cooking for an additional 2 minutes until golden brown.  

Prepare a plate and place the cooked pancakes while you repeat the cooking process with the remainder of the batter. 

 

 

Stack the pancakes onto a large plate or platter and add the final touch by garnishing with sliced strawberries.
