Traditional pasta contains more carbs than zucchini. Two ounces of wheat pasta contains 32 grams of carbs, while a cup of zucchini has about four carbs. 

This Keto Pasta Salad is also made with cherry tomatoes and creamy avocados. The pumpkin seeds add texture to the salad, while the lemon olive oil dressing adds a bright and fresh flavor. Serve this keto pasta salad with a protein of your choice to make this meal complete.

Instructions

Keto Pasta Salad
Trim the ends of zucchini. Use a vegetable spiralizer to spiralize the zucchini. 
Divide the zucchini noodles between 4 salad bowls
Add the cherry tomatoes, green onions, avocados, pumpkin seeds, and parsley. 
Dressing
To a small bowl, add olive oil, white wine vinegar, lemon juice, salt, pepper, garlic, and ginger. Whisk to combine.  
Pour over keto pasta salad and toss to combine.
