Missing your sushi? This Crab Salad Sushi allows you to enjoy Sushi, without a ton of carbs. For this Crab Salad Sushi, we used imitation crab. Although people look down on imitation crab, it is a delicious ingredient. Essentially it's made from surimi or white fish such as pollock. The fish is shredded to remove any impurities and heated and pressed into crab-leg shapes. As a result, you have imitation crab that closely resembles real crab's color and texture.
This Crab Salad Sushi is incredibly simple and irresistible. First, a mayonnaise lemon dressing is mixed; then, imitation crab is tossed until every morsel is coated with yummy sauce. Since we are serving this crab salad sushi appetizer style, we decided to add it to cucumber rounds to provide a delicious, refreshing bite.

If it is unopened, simply place your imitation crab meat into the freezer. If your imitation crab meat is opened, place it into a Ziploc bag before storing it in the freezer.
