Craving some good old-fashioned comfort food? This Keto Meatloaf with Pork Rinds is sure to satisfy your cravings. The combination of ground beef and ground pork adds extra depths of flavor. And the addition of the Parmesan cheese makes this meatloaf so irresistible. Don't be surprised if you go back for seconds! And unlike some keto meatloaf, this meatloaf is firm, not mushy. That's because you're still using a binder. In this case, it's crushed pork rinds instead of breadcrumbs. So you get the texture of traditional meatloaf without all those carbs. Pork rinds are also high in fat and protein, fueling ketosis and keeping your appetite in check. This meatloaf goes well with garlic sauce and your favorite steamed low-carb vegetables.

Ingredients

  • 3/4 pound Ground Beef

  • 3/4 pound Ground Pork

  • 1 1/4 cups Crushed Pork Rinds

  • 1/4 cup Parmesan Cheese, grated

  • 1/3 cup Low Carb Tomato Sauce such as Rao's

  • 1/2 cup Onion, chopped

  • 1 large Egg

  • 1/2 teaspoon Garlic Powder

  • 1/2 teaspoon Salt

  • 1/2 teaspoon Pepper

Instructions

Preheat oven to 350 °F. 

Add ground beef, ground pork, crushed pork rinds, Parmesan cheese, low-carb tomato sauce, onion, egg, garlic powder, salt, and pepper in a large bowl. Combine well, and form into a loaf.

Place loaf into a greased 9 x 5-inch loaf pan

Bake for about 1 hour, until brown or until the meat is cooked.

Serve with garlic sauce and low-carb steamed vegetables such as broccoli, cauliflower, or green beans.
