Ingredients

  • 1 tablespoon Chili Powder
     

  • 1/2 teaspoon Cumin
     

  • 1/2 teaspoon Coriander 
     

  • 1 teaspoon Smoked Paprika
     

  • 1 teaspoon Garlic Powder
     

  • 1 teaspoon Kosher Salt
     

  • 1/4 teaspoon Black Pepper
     

  • 1/2 teaspoon Cayenne Pepper 
     

  • 4 boneless skinless Chicken Breasts
     

  • 3 tablespoons Olive Oil, divided 
     

  • 1 cup Low-Sodium Chicken Broth 
     

  • 1 1/2 cups Sugar-Free BBQ Sauce 
     

  • 1 tablespoon Apple Cider Vinegar

Instructions

Whisk the chili powder, cumin, coriander, smoked paprika, garlic powder, kosher salt, black pepper, and cayenne pepper in a small bowl. 
 

Prepare the seasonings

Place the chicken breasts into a large bowl, add the olive oil, and toss to coat the chicken breasts in the oil.

Add the chili powder mixture and toss to coat the chicken breasts in the seasoning.

Place the remaining olive oil into the Instant Pot and press the sauté setting.

Place two chicken breasts into the Instant Pot and cook them for 2 minutes.

Turn the chicken breasts over and cook them for 2 minutes, then transfer the chicken breasts to a plate. Repeat steps 5 and 6 to brown the remaining chicken breasts.

Select the cancel function and add the chicken broth, 1 cup of BBQ sauce, and apple cider vinegar to the instant pot.

Return the chicken breasts to the Instant Pot and place the lid on the Instant Pot.

Switch the vent to sealing, press the manual button, and set the timer for 10 minutes. 
 

Cooking chicken for another 10 minutes

Let the pressure release naturally for 10 minutes.

Remove the lid, and place the chicken breasts into a serving platter.
