Ingredients

  • 4 1⁄2 cups Flour

  • 4 1⁄2 teaspoons Baking Powder

  • 1 teaspoon Salt

  • 2 1⁄4 cups Granulated Sugar

  • 3⁄4 cup Chopped Dried Mixed Peel

  • 1⁄2 cup Chopped Cherries

  • 1 cup Raisins

  • 3 cups Grated Coconut

  • 1⁄4 teaspoon Ground Cinnamon

  • 1⁄4 teaspoon Ground Nutmeg

  • 2 Eggs

  • 1⁄2 cup Evaporated Milk

  • 2 teaspoons Coconut Essence

  • 1⁄2 lb melted Butter

Instructions

Sift Flour with baking powder and salt.

Add sugar and fruits followed by coconut as well as ground cinnamon and nutmeg. Mix thoroughly.

Whip the eggs in a separate bowl and whisk in the milk as well as the coconut essence and melted butter.

Make a dent in the flour and pour the egg mixture in. Stir until combined. The consistency of the batter should be sticky and fairly stiff.

Divide the batter into 2 greased bread pans (9x5) and bake for 50-60 minutes at 325 F (160 C) until an inserted toothpick comes out clean.
