This sweet and salty salad is made using blanched peas mixed with crispy bacon, cherry tomatoes, red onions, and cubes of white cheddar cheese, all coated in a homemade creamy avocado basil dressing that makes this salad extra delicious.

Ingredients

Creamy Avocado Basil Dressing
  • 1/2 cup Greek Yogurt

  • 1/2 cup Mayonnaise 

  • 1/4 cup Red Wine Vinegar

  • 1/4 teaspoon Sea Salt 

  • 1/8 teaspoon Ground Black Pepper 

  • 1 ripe Avocado

  • 1/2 cup Basil, leaves chopped 

English Pea Salad
  • 8 slices Bacon 

  • 4 cups frozen English Peas

  • 12 Cherry Tomatoes, cut into quarters 

  • 1/4 Red Onion, thinly sliced 

  • 1/2 cup White Cheddar, diced

Instructions

Creamy Avocado Basil Dressing

Place all the dressing ingredients into a blender and blend quickly until smooth. Set the dressing aside until ready to use. 

Blend the dressing ingredients in a blender at high speed until it is completely smooth. The dressing should be set aside until used.
English Pea Salad

Preheat the oven to 375 F. Line a baking sheet with parchment paper before laying the slices of bacon onto the tray. 

Set the oven to 375 degrees. Before placing the bacon slices on the tray, cover a baking sheet with parchment paper.

Bake the bacon in the oven for 10-12 minutes until crispy, flipping the bacon halfway through cooking. 

After flipping the bacon halfway through cooking, bake the bacon for 10 to 12 minutes, or until it is crispy.

Transfer the bacon onto a plate lined with a paper towel to drain off any excess fat before chopping the bacon. 

Before chopping the bacon, place it on a plate covered with paper towels to drain any extra fat.

Fill a medium-sized pot with water bringing it to a boil on the stovetop. 

Bring water in a medium-sized pot to a boil over the heat.

Add the peas to the pot, cooking them for 2 minutes. 

The peas should be added to the stew and cooked for 2 minutes.

Prepare an ice water bath; use a slotted spoon to transfer the peas into the water bath, cooling them off for 5 minutes.

Use a colander to drain the liquid from the peas before adding them to a mixing bowl.
