And they're topped with prosciutto, pine nuts, and fresh herbs - the perfect balance to the crispy, cool cucumbers. These cucumber cups are so easy to pop in your mouth. What's more, this recipe is also low in carbs. One serving contains just 4.8 grams of net carbs.

  • 1 large Cucumber

  • 3/4 cup Feta Cheese, crumbled

  • 1/4 cup Pine Nuts (plus 1 tablespoon for garnish)

  • 2 tablespoons Sour Cream

  • 1 slice Prosciutto, cut into 1/2 inch X 1-inch strips

  • Fresh Herbs for garnish (Optional)


Using a vegetable peeler, score the cucumber lengthwise to create stripes.

Cut off the ends of the cucumber, and then cut the cucumber's body into 1-inch rounds.

Using a melon baller, scoop the seeds from the center of the cucumber rounds to form a cup.

To a medium bowl, add feta cheese, 1/4 cup pine nuts, and sour cream, mixing well. 

Spoon the feta cheese mixture into the cucumber cups. Garnish with prosciutto and the rest of the pine nuts. Top with herbs.

Chill until ready to serve.
